“Tokisake” means young salmon that appears in the sea near Japan during their seasonal migrations. They are in the middle of growth, so the fatty fillets have a lot of nutrition because the ovary or testicle is still immature.
Among that delicious salmons, we prepare the cut and salted fillets soon after being caught by the fixed nets.
