Hidaka kombu (a type of sea weed called tangle) gotten on a coast of Hidaka, Hokkaido involves rich Umami component (has rich taste).
It becomes softer when it boiled, so you can enjoy it of course to take the soup (dashi), but also it can be arranged to various foods.
