Speedily killed squid lived in a special fish tank is washed in sterilized cold seawater, and processed through proton freezing.
Considering convenient use, the ink sac is removed in advance, and wrapped in every single pack. Just by thawing it by running water, you can enjoy the Sashimi.
This is seasonal product. It has been available since August, this year.
Proton freezing is a freezing technique to keep food’s quality and suitable size of ice particle when it is frozen.
To prevent food cell destruction, the technique is efficient to minimize dripping, keep the color, kill the parasites, or prevent increase of bacteria causing food poisoning.
