"Hishio" is a specialty product of Obama City, Fukui Prefecture.
Wakasa Obama, a gateway to continental culture and a treasure trove of seafood from the Sea of Japan, has long produced a fish soy sauce called hama soy sauce.
Marumi's Taihishio uses only the flesh of fresh small sea bream caught in nearby waters, and is aged in salt and fresh water for half a year. We are proud of the luxurious production method unique to Fukui's specialty "small sea bream sasazuke".
"Ichiban Shibori" is a condensed flavor of sea bream. It is very useful for anything such as hot pot, secret ingredient of simmered dish, matadashi, and soup. (The salt content is high, so be sure to dilute before using.) Another major feature of this product is that it has no odor, so it can be used by people who don't like fish.
